As a Nanjing Local, Guest Chef Dai Zhengle from Wanda Realm Nanjing, has over 10 years professional culinary experience in Huaiyang cuisine and has worked in several five star hotels in Nanjing. During the Guest Chef promotion, about twenty dishes are concocted to excite your taste buds. Special recommendations include Braised Pork Ball in Superior Soup, Boiled and Dried Bean Curd, Stir-Fried Shrimp with Gordon Euryale, Vegetarian Goose, Pan-Fried Water Chestnuts with Fish Cake, and many more.

戴正乐厨师拥有十余年的烹饪经验,地地道道的南京人,无论是最初踏入厨师行业,还是在淮扬菜名厨前辈的指导下不断磨砺技艺,戴师傅始终坚持回归食材本味,并用创意和才能去身体力行。从厨10余年,曾在南京多家五星级酒店工作过,积累了丰富的经验,淮扬菜做得经典正宗。戴大厨提到淮扬菜的原料以鲜活为主,讲究季节性,在调味时,淮扬菜力求清淡,擅长炖焖烧煮,以突出原料的本味。菜系风味甜咸适中,咸中微甜。在制作时,淮扬菜讲究刀工的精细荟萃了多种健康食材,营养丰富。不出津城就能吃到纯正的淮扬菜,对于咱们北方人来说确实是一个尝鲜的好机会。

蟹粉狮子头是江苏扬州地区特色传统名菜,属于淮扬菜系。口感松软,肥而不腻,营养丰富。红烧,清蒸,脍炙人口。主要原料是蟹肉和用猪肉斩成细末做成的肉丸(扬州人俗称“斩肉”)。RMB38/位)

松鼠桂鱼又名松鼠鳜鱼,是江苏省苏州市地方传统名菜。当炸好的鳜鱼(或桂鱼)上桌时,随即浇上热气腾腾的卤汁,它便吱吱地“叫”起来,因活像一只松鼠而得名。成菜后,形如松鼠、外脆里嫩、色泽橘黄,酸甜适口,并有松红香味。RMB238/例)
